1 Promotion of Smoking Cessation Seventh-day Adventist s Contributions to Health and Nutrition Fred Hardinge, DrPH, RD Associate Director, GC Health Ministries Seventh-day Adventists were among the first to show that smoking increased the heart attack risk. Lemon FR, Calif Med 1958:89:267-72; Cancer 1959; W. A. Scharffenberg, director of the Adventist World Church Temperance Department, produced the film 1 in 20,000 in 1954 of Dr. Alton Ochsner doing lung cancer surgery, which Scharffenberg said was a 25-minute stop smoking program. This indirectly inspired Luther Terry s famous report on smoking and health. The film was translated into 14 different languages and seen by 75 million people. Seventh-Day Adventists were the initiators of the Five-Day Plan to Stop Smoking in SDA Health Message Smoking and Pregnancy Seventh-day Adventists DO have something to say about health and nutrition Seventh-Day Adventists are among the longestlived population groups ever. Dr. Winea Simpson, a pediatrician (LLU) First studies in the U.S. to show the adverse effect on babies when the mother smoked during pregnancy. She also compiled the book Counsels on Diet and Foods in 1938 Am J Ob & Gyn 1957;73: International Conference on Smoking and Health W. A. Scharffenberg, an educator and director of the General Conference of Seventh-Day Adventists, Temperance Department, organized the first international conference on smoking and health which occurred in These are still continuing. This was done in conjunction with Luther Terry, Surgeon General of the United States. Scharffenberg was having difficulty getting an appointment with Terry but in Paris noted Terry was booked on a plane to Rome so he booked on the same plane and discussed the plans for this Congress on that flight Promotion of Nutrition Seventh-Day Adventists have promoted sound nutrition for more than a century. This was done because of a strong belief in the Bible and its predictions of the end-time church having a prophet to give guidance Seventh-Day Adventists were among the first to set the record straight that original man was a vegetarian and not a omnivorous hunter. 2 Adventist Teachings on Health Fruit and Vegetables Beginning around 1850 and extending to 1915, SDAs through the leadership of Ellen White, promoted the nonuse of tobacco and alcohol. In it s place, they promoted adequate exercise, sunlight, rest, pure air, pure water, and adopt the vegetarian diet (MH 127). 7 Loma Linda University research was the first to show fruit and vegetable consumption lowers cancer risk! 3 servings/day reduced lung cancer by 66% Eating legumes & dried fruit 3x/wk reduced prostate cancer Dried fruit consumption reduced prostate cancer by 40% Am J Epidemiol 1996;143: Protein and Kidneys Vegetarian Diet and Diabetes Dr. Newton Evans, a pathologist and Dean of LLU s medical school, was among the first to show a high-protein diet had adverse effects upon the kidneys of animals. His paper, High Protein Ration as a Cause of Nephritis was read before the L.A. County Medical Society January 3, California and Western Medicine April LLU research was the first to show vegetarians had a much lower risk of diabetes. During 21 years follow-up of 25,696 adult white SDAs the diabetes rate was about onehalf the risk in the general population. Within the SDA, group diabetes was less in the vegetarians. (This association with meat was stronger in males than in the females.) Am J Public Health 1985;75: Adequacy of the Vegetarian NUTS Dr. Mervyn Hardinge was the first to show that the vegetarian diet was nutritionally adequate. This was the focus of his doctoral research at the Harvard School of Public Health Dr. Fredrick Stare, Dean co-authored a series of articles detailing the results in the Am J of Clin Nutr. Other firsts: link serum cholesterol to CHD; link dietary fiber to colon cancer. Am J Clin Nutr 1954;2:73 9 Loma Linda University research was the first to show that the regular use of nuts lowers heart attack risk. Today five major population studies have shown this: Adventist Health Study Nurses Health Study Iowa Women s Health Study Physicians Health Study CARE Study Eur J Clin Nutr 1998;52:12-6; Am J Clin Nutr 1994;59:995-9; Nutr & the M.D. 1998;24:6; Curr Atherscl Rep 1999;1:204-9 Arch Int Med 1992;152:

3 Whole Wheat Bread Meat, Fish and Colon Cancer Loma Linda University research was the first to show whole wheat bread lowers heart attack risk. SDA research was among the first to show the use of meat increased the risk colon cancer Also showed fish and white meat had as great an effect on colon cancer risk as red meat Am J Epidemiology 1998;148:761-4 Gary Fraser, Adventist Health Study Beans Loma Linda University researchers were the first to show beans lower the risk of colon cancer in those who consume meat. Eating meat 1 time per week increases colon cancer risk by 2.5 times for those not eating legumes. If one eats beans 3 times per week, the risk is decreased by 67%. If eaten daily, the risk is at the low risk of vegetarians Animal Products and Prostate Cancer Risk SDA research showed prostate cancer risk is 3.6 times higher in those who are high consumers of meat, milk, eggs, and cheese. Third Conference on Vegetarian Nutrition, pp , Am J Epidemiol 1984;120: Tomatoes Soy and Prostate Cancer SDA research was the first to show tomatoes consumption lowers the risk of prostate cancer. This study of 14,000 men ( ) with 180 cases of prostate cancer. Increased use of beans, lentils, peas, tomatoes, raisins, dates and other dried fruit were SDA researchers were the first to show that consumption of soy milk more than once a day was associated with a 70% reduction in risk of prostate cancer. Cancer 1989;64: Cancer Causes Control 1998;9:

4 Meat and Heart Attack Risk Infant Soy Milk SDA researchers were the first to show meat consumption increases the heart attack risk. Among SDA men years of age there was a 3 times greater risk of heart disease among those who ate meat daily vs. those who did not eat meat. Prev Med 1984;13: ; J Am Geriatr Soc 2005;53: Dr. Harry Miller, an SDA physician noted for his work in China, developed the infant soy milk. He sponsored studies that demonstrated properly formulated soy milk provided adequate nutrition for the developing infant. Dr. John Scharffenberg, LLU graduate, was the first to add iodine to infant soy milk (Soyalac) to reduce the goitrogenic risk from soybeans. Proceedings of Conference on Soybean Products for Protein in Human Foods, September , 1961, USDA Water and Heart Attack and Stroke Risk SDA researchers were the first to show 5 cups of water a day vs. 2 or less reduced the risk of heart attack with a RR for men of 0.46 and women 0.59 They also showed it reduced the risk of stroke. The RR for men consuming 5 or more cups of water vs. 2 or less was 0.47 and for women Am J Epidemiol 2002;155:827-33; Am J Epidemiol 2002; 156 Abstract # Tooth Decay Dr. Ralph Steinman and his team, of LLU s Dental School, demonstrated that tooth decay is an intrinsic metabolic problem. He showed how sugar affects the hypothalamus which prevented its hormone from going to the parotid gland and thereby the parotid gland s hormone which controlled the fluid movement in the teeth was not secreted and there was a reversal of the fluid movement in the teeth. Calif Dental Assoc 1967;35:151; Endocrinology 1968;83:807; Am J Clin 23 Nutr 1970;23: Life Extension Sugar and Phagocytosis Five health habits long promoted by Adventists extend life by 10 years in both men and women: 1. Regular exercise 2. Plant-based diet 3. Consuming nuts regularly 4. Normal body weight 5. Not smoking Am J Epidemiology 1996;143: Dr. Ralph Steinman also showed that in animal studies equivalent to a human consuming 18 teaspoons of sugar between meals will reduce phagocytosis by 85%. This lasted for 5 hours before returning to normal. This was compared to the phagocytic index and glucose blood levels in diabetic patients. 24 teaspoons sugar consumed between meals at one time would have the equivalent effect of that of an uncontrolled diabetic. 5 Diet for a Lifetime Pure air, sunlight, abstemiousness, rest, exercise, proper diet, the use of water, trust in divine power--these are the true remedies. Every person should have a knowledge of nature's remedial agencies and how to apply them. It is essential both to understand the principles involved in the treatment of the sick and to have a practical training that will enable one rightly to use this knowledge. MH Question: What diet can I eat that will prevent all disease? Answer: There really is no diet will help you do that! We DO Have Something to Say Seventh-Day Adventists DO have something to say about nutrition and health, and we DO so with the authority and backing of much notable work in these fields. Modern scientific research has supported most of the churches teachings for more than 100 years. Causation: Simple or Complex Simple: a sharp knife against the skin will create a wound. Biology: Always a large number of steps in the chain of events that lead to the final result. This is the case with most diseases. 26 Diet for a Lifetime Question: What diet should I follow to live forever? Answer: There really is no diet will help you do that! Problem is not what we don t know, but what we know that isn t so! Mark Twain

6 Diet for a Lifetime Consider that it is a relatively small portion of people who smoke that get lung cancer--most do not. Some who don t smoke do get it. There are those who eat a diet high in all the harmful things--saturated fat, no fiber, sugar, cholesterol, excess calories--and they live a long time! There are those who eat very healthy diets and do die prematurely of cancer or some other disease. Question: What diet can I eat to minimize my risk of disease and have the best quality life possible? Answer: Let me share some principles to guide your dietary choices. What is Going On? Disease is not a simple model of causation. Must look much deeper. Most diseases are the result of long series of mutations in genes that are vital in supporting the integrity of thousands of other genes. Disease is caused by the complex interactions of our environment, diet, physical activity, even our thoughts and attitudes... Does what I eat or don t eat make a difference? Original Diet Genesis 1:29: The God said, I give you every seed-bearing plant on the face of the whole earth and every tree that has fruit with seed in it. They will be yours for food. Genesis 3:18: adds...and you will eat the plants of the field. Absolutely! What Kinds of Food? It is a matter of minimizing your risks by making healthy choices! Fruit Whole grains Vegetables Nuts

7 These Foods Are... Best when consumed as they come from nature: not refined, not pulled apart, or fractionated. Low in fat Low in saturated fat No cholesterol High in dietary fiber Low in refined sugar Contains rich source of vitamins and minerals High amounts of protective substances: phytochemicals, antioxidants, etc. Lower heart disease Lower cancer rates Dietary Guidelines Use plant foods as the foundation of your meals. Eating a variety of grains (especially whole-grains), fruits and vegetables is the basis of healthy eating. Lower diabetes Less obesity Advantages of a Vegetarian Diet Less hypertension Less dementia

8 Less osteoporosis Longer life expectancy! The use of natural remedies requires an amount of care and effort that many are not willing to give. Nature's process of healing and upbuilding is gradual, and to the impatient it seems slow. The surrender of hurtful indulgences requires sacrifice. But in the end it will be found that nature, untrammeled, does her work wisely and well. Those who persevere in obedience to her laws will reap the reward in health of body and health of mind.
