9 Example of a Standardized Food B (S). Mayonnaise (a) shall be a combination of (i) vegetable oil, (ii) whole egg or egg yolk, in liquid, frozen or dried form, and (iii) vinegar or lemon juice; (b) may contain (i) water, (ii) salt, (iii) a sweetening agent, (iv) spice or other seasoning except turmeric or saffron, (v) citric, tartaric or lactic acid, and (vi) a sequestering agent; and (c) shall contain not less than 65 per cent vegetable oil 9

10 Food Additives Any chemical substance that is added to food during preparation or storage and either becomes a part of the food or affects its characteristics for the purpose of achieving a particular technical effect Examples: anticaking agents, dough conditioners, preservatives, colouring agents, etc. List of permitted food additives are posted on Health Canada website, allowed through Marketing Authorization Must be on these lists or in Tables to Division 16, Food and Drug Regulations for specific foods and not exceeding maximum level of use and conditions listed 10

12 Vitamin, Mineral and Amino Acid Enrichment The enrichment of food with vitamins, minerals and amino acids is only permitted in those foods listed in Section D FDR Examples: Vitamin C in apple juice Fluoride in bottled water Vitamin D in milk Folic acid in flour Water 12

18 Nutrition Facts Table The nutrient information is based on a specified quantity of food as sold It includes the list of Calories and 13 nutrients The value = the amount of the nutrient in the serving The % Daily Value : indicates if there is a lot or a little of the nutrient in the stated serving Regulations include full size graphic representations of formats 18

23 Canada Organic Logo The Canada Organic Logo and the claim Organic and Biologique are regulated by the CFIA. Use of the Logo is controlled by the CFIA. Only those products that are > 95% organic may display the Logo The logo may be either in black & white or in colour (green and red on a white background with black lettering) 23
