Turnip is a starchy vegetable (complex carbohydrate) that provides long-lasting energy for the body. It also is an excellent source of vitamin C. Turnip fossils were found in caves in China, dating back thousands of years. Manganese is a mineral that is essential to proper bone formation and metabolism. Zucchini is a type of summer squash, along with yellow, pattypan, crookneck and chayote squash. That s where most of the fiber (for healthy digestion) and antioxidants (to fight chronic disease) are found. Johnny Appleseed (John Chapman) spent almost 50 years of his life in the wilderness of Illinois, Kentucky, Pennsylvania and Ohio planting orchards. Early in Japan s history, Asian pears were thought to ward off evil and misfortune and the trees were often planted near gates and in the corners of the property. Among other things, asparagus is a good source of vitamin E, an antioxidant that protects the body s cells, helps the body use vitamin K and keeps the skin, hair and immune system healthy. A member of the lily family, asparagus is related to onions, leeks and garlic. Asparagus is the stem of the plant. White asparagus is grown under a foot of soil to prevent photosynthesis.
