Iron deficiency can cause significant problems in overall development and has been linked with lower intelligence in school-aged children. Reducing (total) sugar in potatoes In fried or backed goods like e.g. potato chips, acrylamide may be produced by the reaction between asparagine and reducing sugars (fructose, glucose, etc.).
