7 Starches Retrograded/Resistive RS1 Encapsulated Starch Starch is bound within protein or fiber matrix approximately microns in size. Treated by effective milling (~500 microns) RS2 Crystallized (short-chain) Amylopectin Resistant due to high density and crystalline structure. The amylopectin strands form chain associations which are digested slowly but fully. Treated by effective cooking to open crystal structure and improve enzyme access RS3 Retrograded Amylose During heat processing in excess water, the amylose strands pack tightly to form a strong crystal structure. The presence of thermo-stable alpha-amylase can enhance this phenomena. The result is starch that is completely resistant to digestion.
