1 1 American Culinar y Federation Harrisburg Chapter- PA 181 MISE EN PLACE August 2009 Hello Chefs, Students, and Friends: Thank you to Chef John Schlaner CEC, AAC and his staff for hosting our July meeting. The meeting was well attended and a lot of information was covered at both meetings that night. If it has been a while since you have attended a meeting, please come, we are only as strong as our membership. Our next meeting will be held at the beautiful Hotel Hershey and will be the site for NERC 2010 AAC Dinner in March. Chef Ken Gladysz and his staff always have a wonderful meal prepared for us and it will give you an opportunity to see all the changes Chef Gladysz talked about at last year s meeting. I would like to take a moment to thank my VP Chef Michael Finch CEC for running last months meeting and attending the National ACF Convention with me in Orlando. We gained a lot of information and from last months meeting you can see that 2010 Northeast Regional Conference in Hershey, is shaping up to be a Conference to remember! The meal and the hospitality were excellent.kudos! I would like to also thank Berney from Ashley Foods for the presenting information about the Hereford Beef Program, Russel Newberry and Randy Bobe from the Deadliest Catch Team and Chispanic Enterprises, Inc. for their fun and entertaining appearance. It was also nice to welcome Todd M. Griffith from Alto Sham and Michael Steil from B.S.E Keystone as special guests, at the meeting. A big thank you to all of the chapter members who attended and have been volunteering your time and support in every way possible to make the upcoming NERC a huge success. Just a reminder to everyone that we are looking for items for the silent auction and I hope that everyone will take some time to solicit items and donations for the event. I would also like to extend a very special Thank You to Chef Susan Notter for attending the meeting and her willingness to head up a Baking and Pastry track for the NERC. We all look forward to working with you and your involvement with the Committee. On a personal note I am very proud that the Olewine Center for the Culinary Arts at Harrisburg Area Community College was awarded Accreditation and approved as an ACF Certification Practical Test Site. In addition Bricco our partner and teaching restaurant was officially honored with the 2009 Wine Spectator, Award of Excellence, for having one of the most outstanding restaurant wine lists in world. The Northeast Regional Educational Forum will be hosted by Chef Macrina at the Desmond Hotel in Malvern, Pa on September 11,12,13th, make plans to attend this great event. Ronald McDonald house: Chairperson: Bob Roebuck Co-chair: Tim Durgey Thank you to Allen Friend for July. The volunteer prepares a dish chilled in a disposable pan. The Ronald McDonald house is for family members that have family at the Hershey medical center. Chef Roebuck is seeking a volunteer to prepare a meal for August 1st or 2nd. Channels: Chairperson: Mike DeMarco Co-Chairperson: John Reis Chef s on Parade : The dinner was May 31st, 2009 from the Harrisburg Hilton. The event raised a $44, 857 net profit a 17.3% increase from Thank you all for your help. Sadly Chef DeMarco is no longer with Channels. Taste: Chairperson: John Reis Co-Chairs: Roebuck, Finch, Gipe, & Durgey The 2009 event will take place November 1st and is currently seeking 50 participants. Our chapter will take charge of breakfast preparation and will not have a station. Blood bank: Chairperson: Mike Harants Co-chair: Tim McGrath No new report. 16 units is the goal for If you are planning on donating blood and you do not have a specific individual you would like to donate it to. Donate to ACF PA 181. Golf Outing: Chairperson: Charlie Gipe Co-chair: Andy Ralph The event will take place October 19, 2009 and will be followed by the chapter meeting with the Pennsylvania Restaurant Association participating. Golf outing for 2009 is October 19th, Hershey Country Club. 4
5 5 Correspondence: Thank you letter from Ronald McDonald house. Cooking School: The cooking school was started by channels as a welfare to work program over 9 years ago. The students learn the basics during the 12 week program. New class of 15 students starts in August Text Books are needed. They are now in the new facility and have a new phone number channels Food Rescue 2009 Kids Café Meals has served 42,911 meals from Jan May. SkillsUSA: Cher Harris, Charlie Gipe, & Tim Harris 9 Students from Lebanon CTC went to nationals, Naomi Bechtel placed 9th in pastry arts Molly Riothermel placed 15th in Culinary Arts and 21st in Open/Closing team. Congratulations to all. Pennsylvania State Competition is April 15, Lebanon County CTC Tour De Cure: Plans for the 2010 event will be announced at future date Northeast Regional Conference: pa 181 will be hosting the 2010 Northeast Regional Conference at the Hershey lodge and Convention Center. The dates are March13th, 14th, and 15th Committee meetings to plan for the 2010 Northeast regional conference will be held at 5:00 before every scheduled monthly meeting. New business: Mike Membership Professional member recruits 2 NEW members Receive 2 years for price of one years dues. HACC Received ACF Accreditation and Certification Test Site Status Motion was carried for the Chapter to reimburse Chef Peffley for attending Nationals Chef Peffley was selected to replace Noble Masi on the ACF National Certification Secondary Baking and Pastry Commission. Chapter members will receive a 15% discount from for Serve Safe certification The implementation of individual state meetings to be held at regional conferences and the recommendation that all chapters to appoint an ethics chair and the formation of an independent Nominations and Elections Committee within the chapter( tabled for further discussion at the next meeting) Chef Finch read the proposed new Culinarians Code to be included with the newsletter for future review.
