PRESIDENT S MESSAGE Hello Chefs, Students, and Friends: With the busy holiday season upon us, I hope that everyone will have the opportunity to spend time with friends, family and loved ones. Please remember those who are struggling and take the opportunity to make someone's holiday a little more special. We had a great November meeting and I would like to take the opportunity to thank Chef David Gurdus, CEC and his staff for hosting the meeting and a great meal. Our guest presenter Michael Gallagher from Peak Sales and Marketing, brought us a lot of new product to sample and I hope that you will find an opportunity to menu some of the items, thanks Michael for supporting the chapter. A special thanks to Ed Byrem and his guest Ms. Bella Anderson. Bella is an inspiration to be applauded. Her determination to help those less fortunate is something that everyone should emulate and I am very happy that as a chapter we were able to support her in her efforts. I am sure that with the help from the chapter Bella will reach her goal for this year and her true spirit of giving will make a difference in the lives and holiday memories of others. I look forward to seeing you all at the December meeting and Happy Holidays to all! 2 THE V.P. CORNER Check out the Gingerbread House that Brian Peffley created SEASONAL PRODUCT SPOTLIGHT Greetings Fellow Culinarians, W ell The holiday season is upon us once more! I always tend to have flashbacks to my days at the Hotel Hershey as an apprentice and the immeasurable amount of work that was done by individuals. Breakfast with Santa still gives me nightmares!!!! There was one aspect that I did enjoy at this time of year and that was show work. I spent many hours working with my fellow apprentices and co-workers on pieces containing chocolate, gingerbread, marzipan, sugar, tallow, pastillage and ice. I would be amiss if I didn t give a shout out to the Hotel Hershey which allowed me access to all the ingredients and materials to create all of the show work. I strongly suggest that culinary and pastry instructors incorporate some type of show work into their curriculum. It really drives home the point of culinary and pastry ARTS!!!! I believe the students will gain valuable lessons in time management, proper planning, execution and most of all patience!!!! Check out the Gingerbread House ( left side) that Brian Peffley created, I guess he hasn t lost his touch! I would like to take this time to Thank all of You for a very rewarding year as the V.P. of our chapter. I know we will continue to grow in all aspects of our field and the chapters name will be continually heard in ACF circles across this country. Please support Chef Spencer Mundy as our new V.P. He is energetic and has a passion for our industry. I believe he will become a great asset to our chapter. We need to continue the infusion of new blood into our chapter, so we can lay the foundations for the future. Congratulations to Chef Dave Gurdus CEC, you have shown that patience and persistence pays off! You are a credit to our profession and to our chapter. Again well done! Education Chairperson: Ed Byrem Co-Chair: Michael Finch Work continues to provide educational venues for our future meetings. Continuing Education Chairperson: Gary Johnson Make sure you sign in at meetings to receive continuing education hours. Chef Finch is now able to approve Certificates for Continuing Ed Hours. If you are certified you can log in under your Member ID to review Continuing Ed Hours. Membership Chairperson: Richard Blythe Co-Chair: Chick Zoll You may complete the entire membership application under membership. Please remember to renew your membership. Academy of Chefs Chairperson: Bob Roebuck Co-Chair: Tom Long AAC The Academy Meeting at the NE Regional Conference is Sunday 4/29 from 10-11AM and an Educational Forum 2:15-3:15PM. The Academy Dinner will be at the Buffalo Club at 7PM. Dinner is $ Per Person. Ronald McDonald House Chairperson: Bob Roebuck Co-chair: Tim Durgey Chef Roebuck gave the report for Ronald McDonald House to thank Lebanon County CTC for hosting November. Richard Blythe from Sysco Foods is hosting December. Please bring your Cookie Trays to the December Meeting which will be donated to the Ronald McDonald House for the Holidays. Taste Chairperson: John Reis Co-Chairs: Roebuck, Finch, Gipe, & Durgey The Taste happened on October 30th and raised approximately $106,000. There is a Wrap -Up Meeting on January the Food Bank. Blood Bank Chairperson: Mike Harants Co-Chair: Tim McGrath Chapter Goal is 16 pints. Please donate to ACF PA 181. Thanks to the students at Lebanon Career and Technology (21 UNITS Donated in Total) we will have reached our goal for Great Job! SkillsUSA Cher Harris, Charlie Gipe, & Tim Harris The dates are April 18th,19th and 20th. State Competition is April 19th. Local Skills at Lebanon Career & Technology is Monday December 12th from 8AM-12PM for the Culinary Arts and Pastry Arts. Tour De Cure Tim Roben RIDERS NEEDED for June 9, This years location is in Grantville. Tim is looking for assistance with a new food venue to be located at the Grantville fireman's grounds. 5 ACF NEWS BRIEFS Old ACF Business Boy Scouts Venturing Program Charlie Gipe held a meeting with the Boy Scouts of America and their Venturing program and a crew committee has been formed. The crew will meet at 6 PM prior to the regularly scheduled chapter meetings. This is a great opportunity to network and anyone is welcome to attend. Contact Chef Gipe for further information and a new page has been added to website where information can be found under Venturing. Five (5) people are needed to make a Crew, two(2) are currently signed up. There was a motion by Ed and a Second by Bob for PA 181 to Donate $ to Bella Anderson for her Annual Food Drive. Please see the insert for more information.
