1 M ISE EN PLACE A publication of the American Culinary Federation Harrisburg Chapter PA 181 May, 2012 NEXT MEETING May 21, 2012 Hilton Harrisburg 200 Market Street Harrisburg, Pa pm PRESIDENT S MESSAGE Hello Chefs, Students, and Friends: I would like to express my appreciation and thanks to Chef Notter and the staff at the Lebanon Valley Country Club for their great hospitality and hosting the April meeting. I would also like to recognize the guests, and crew from John Gross for their donations and contributions in support of our chapter. Pa Flavors National Convention July World Center Marriot Orlando, Florida Visit convention for deadline dates, downloadable registration form and conference schedule. This years event was once again a big success. I would like to recognize Chef s, Spencer Mundy, Richard Blythe, Tom Long and Dave Gurdus. The work and dedication that they contributed to the event was instrumental in making this years event happen. It was also the support from Sysco and the students from HACC that donated their time and energy that made the day possible and fun for all. I hope to have a follow up for everyone at the next chapter meeting and look forward to increased participation from the chapter members with future events. CONGRATULATIONS Chef Timothy Harris, was the recipient of an ACF Cutting Edge Award, at the 2012 Northeast Regional Conference held in Niagara Falls. I would also like to send out a big round of applause to Chef Ken Gladysz, CEC, Chef Cher Harris, CEPC and Victor Kendlehart, CC, for their valiant efforts and representing our chapter in the competitions held during the regional. What a great day to have our chapter represented in every major event. Kudos to all and job well done! CORNER May National Hamburger Month Greetings Fellow Culinarians, A round of applause to all the Chefs that went to and participated in competitions at the Northeast Regional Conference as well as the Chefs and Students that helped with the PA Flavor PA flavor was a successful event! It would not have happened with out the volunteers commitment and all the teamwork. Thank you Chefs and Students for your support! The PA flavor event continues to grow and we have been invited to participate next year too. May is National Hamburger Month, which some folks may think this is boring but, burgers are a great way to increase your sales and bring in high profits. Burgers are very easy to make high class and delicious. Just check out this web page by the Wisconsin Milk Marking Board. SEASONAL PRODUCT SPOTLIGHT Lemon Verbena is available spring and summer. Learn theproducehunter.com I had a extraordinary experience in Wisconsin learning all about cheese, I was able to meet two Master Cheese Makers. There is only 52 in the state of Wisconsin! Takes ten years to become a master of one cheese variety such as cheddar, mozz, or blue cheese. Interesting fact I learned, it takes 10 lbs of milk to make 1 lb of cheese. The picture is from Hennings cheese factory. Behind me is a 12,000 lbs wheel of cheese. Hennings is the last US company to make wheels of cheese this large. Hennings cheese maker is master of Cheddar, Colby and Mozz. Their web page has a lot of helpful info about cheese. Lemon Verbena has a very pungent lemon flavor. If you are seeking a lemon flavor but, you do not want the acid or the liquid of a lemon, lemon verbena would be a perfect substitute. Lemon verbena goes well in any type of salad, it would make a great garnish chiffonade or left whole. The meeting was held at Lebanon Country Club located at 3375 W. Oak Street, Lebanon, PA We had the Pledge of Allegiance and Prayer. The following officers were present: President Michael Finch CEC,ACE, Secretary Marsha Brandt and Chairman of the Board Brian D. Peffley CEPC, CCE,AAC. 4 COMMITTEES & PROGRAMS Certification Chairperson: Michael Harants Co-Chair: Robert Corle Candidates may now register for a practical exam on the national website. Dates are being reviewed for hosting a practical in June or July. Correspondence The chapter received a Thank You Letter from the Ronald McDonald House as well as their Monthly Newsletter. The chapter also received a Thank You Letter from Victor Kendlehart for the chapters support at the Northeast Regional Conference. Education Chairperson: Ed Byrem Co-Chair: Michael Finch Bob Roebuck has requested that the chapter members call or Bob with any ideas for the Educational Segment of the monthly meetings. This would include if any our members would like to do a Cooking Demo. Please contact Bob at or roebuck2@verizon.net. Just a reminder to make sure to sign in at meetings to get credit for Continuing Education Hours. There was also a request to include first and last name of the members making a motion and/or second. Golf Outing Chairperson: Brian Peffley Co-Chair: Spencer Mundy No update provided at the April meeting. Academy of Chefs Chairperson: Bob Roebuck Co-Chair: Tom Long AAC The Academy Meeting at the NE Regional Conference is Sunday 4/29 from 8-9 AM and an Educational Forum 11:30 am-12:30 pm. The Academy Dinner is at the Buffalo Club at 7PM. Dinner is $ Per Person. There are 6 Honorary and 4 hall of Fame Chefs being recognized. Ronald McDonald House Chairperson: Bob Roebuck Co-chair: Tim Durgey Bob Roebuck thanked Ed & Barb Byrem for taking care of the House Dinner in March and Dave Gurdus for April. Taste Chairperson: John Reis Co-Chairs: Roebuck, Finch, Gipe, & Durgey The event is scheduled for October 28,2012 at Strawberry Square. This is the 25th Year Anniversary. Blood Bank Chairperson: Mike Harants Co-Chair: Tim McGrath Chapter Goal is 16 pints. Please donate to ACF PA 181. LCCTC is having a Blood Drive. Chefs Move to Schools Chairperson: Dave Gurdus Adopt-A-Ship Program Mike Harants If you have any interest in participating in the program please contact Michael Harants. No update provided at the April Meeting. SkillsUSA Cher Harris, Charlie Gipe, & Tim Harris The dates were April 18th,19th and 20th. State Competition was April 19th. Please see insert with results. Tour De Cure Tim Roben RIDERS NEEDED for June 9, There are 2 teams formed at this time. You can join Tim Harris and ride for the ACFHARRIS- BURGCHEFS Team or Jeremy Morrow for the SYSCO Team. This years location is in Grantville. Tim is looking for assistance with a new food venue to be located at the Grantville fireman's grounds. 5 ACF NEWS BRIEFS Old ACF and New ACF Business The ACF Northeast Regional Conference was in Niagara Falls NY on April 28-30th at the Niagara Falls Crowne Plaza and Conference Center. This years event was hosted by the Greater Buffalo New York Chapter. Look for comments and feedback at the next meeting. PA Flavor Beer and Food Festival was Saturday April 28th There was a VIP Reception from 1PM-2PM and the General Admission was 2PM-5PM. The event was at the Main Hall of the Pennsylvania Farm Show Complex. Spencer Mundy was heading up the Chapters Booth at the event. The Chapter Booth was sponsored by Sysco. Please see Michael and Spencer's comments. NEXT MEETING Hilton Harrisburg 200 Market Street Harrisburg, Pa pm Students Don t forget about the 2012 Lead Like Mike Contest. Tim Harris gave the chapter a recap of the Chesapeake Culinary Cup and the 2012 PA School of the Culinary Arts 4 member Team from YTI. All students walked away with a medal. The end of October is the Harvest Cup Competition. The ACF is offering $ grants to chefs participating in the National Chefs Move to School Program. Three granting opportunities are available in Chefs interested in applying must be registered with the NEW Chefs Move to Schools website, be matched with a school and have volunteered twice within a year. The American Culinary Federation has another exciting opportunity for culinary students and apprentices at the 2012 ACF National Convention, Be a Member of the ACF Culinary Team USA. Please help us spread the word and inform your students about it, so they can apply by the May 24th deadline. Meeting Hosts Needed! We are starting to book dates for 2013 calendar year. If you are able to host a meeting please contact a chapter officer. HACC has completed the reaccreditation process with flying colors. The National Convention is July in Orlando Florida at the Orlando World Center Marriott Resort. The Allenberry Playhouse is looking for an Executive Chef.
