1 105/17/2011 American Culinar y Federation Harrisburg Chapter- PA 181 MISE EN PLACE May 2011 Hello Chefs, Students, and Friends: I would like thank, Chef Rob Poulton, the faculty, and students at the Pennsylvania School of Culinary Arts at YTI for their warm hospitality as hosts for the April meeting. On behalf of the chapter I would like to wish all of the students chosen for culinary competition team great success in their quest for gold in the upcoming competitions. I would also like to recognize Victor Kendlehart and Rachel Johnson from the HACC culinary program as they embark on their journey to be selected to represent the Northeast Region at the Student Culinarian Invitational to be held at the National Convention in July. It is great to see the student membership taking an active role in the opportunities available to them. We wish you all the best and pledge our full support as a chapter A C F N A T I O N A L E L E C T I O N S - V O T I N G E L I G I B I L I T Y ACF members will vote electronically in May for the Board of Directors national officers: president, regional vice presidents, secretary and treasurer. To ensure correspondence reaches you, please update your contact information, especially your e- mail address, by either logging into the ACF website and updating your profile or by calling the ACF office at (800) Your membership dues must be paid by March 31 to be eligible to vote. With the National Elections quickly approaching I urge all of our members to exercise your right to vote and have your voice heard.. The choices we make affect the direction of this organization and its members as a whole. Please consider all of your choices and vote wisely. The current board has done a tremendous job and have moved this federation in a positive direction. C O R L E J R, C E C, C C E Greetings Fellow Culinarian s April showers bring May flowers if this saying is in any way true we are in for the most beautiful May in recorded history. I think I will just plant watercress this year in my garden! I am not going to let this soggy weather bring me down though, we have so much to be grateful for. To see the young culinarian s doing a run through for their upcoming competition at YTI s state of the art kitchen was all the motivation I need to push on. I came away from our April meeting refreshed and excited about our career field. There is no doubt that we as a chapter need to move forward and put more time and energy into our youth. I believe that the State of Pennsylvania needs to recognize the validity of our profession and the need for trained young professionals. At this point in time culinary and pastry especially are struggling to get the commonwealth to put our career paths at a high priority. I will be sending out a High priority Occupation List Questionnaire via to members that are in a position to give information on hiring young culinarians. I would also like input concerning pastry arts and the need for trained pastry art students. In this way we can show the department of technical education what our industry really needs. I hope you would support us in this endeavourer. Thanks As in last months news letter I would like to highlight seasonal products and what better item for the month of May, than the precious Morel Mushroom. I spent many days as young boy hunting these flavorful wild mushrooms with my uncle. We use to just dredge them in flour and sauté them in butter until crispy. What a childhood memory! I still love them today and a friend of mine keeps me in good supply. I actually will receive some today and since it s a little cooler out the Morels are in pristine condition at this time. Charlie reported that $12,000 was raised. Old Business: Charlie talked to the chapter about getting involved with the Boy Scouts of America and their Venturing program. There was a meeting in Dec with the Boy Scouts to find out more info about the Venturing program. More will be discussed at upcoming chapter meetings. Website The site is in the process of being updated. Working on new marketing & updating Technology. Ed Byrem is to form a committee for national night out in Lemoyne which is the 1st weekend of august. Ed wants to focus on the move to school program for the event. New business: PA Flavor Event Saturday April 9, 2011 at the Farm Show Complex featuring Local Restaurants, Brewers and PA Preferred Vendors. The Chapter will have a booth at the event. 250 participants signed up. Looking to sale 1,000 tickets. The PRA formed a Student Application. Students can join for $20.00 Annually. Join online at Brian Peffley is getting prices for new signage for the chapter to use at events. The ACF culinary team will compete on April 25, 2011 for the Chesapeake cup. There are 8 students and 5 coaches. There will be a Rational Self Cooking Center demo at Sysco Central PA on Friday April 29th at 10:00 am. Please contact Chef Richard Blythe with any questions at Lebanon Country Club is looking for a Dining Room Manager. Please call Chef Notter at ext:118 or for more information. We still have the following months open for hosting our monthly meeting July, November and December. If you are able to host a meeting please contact a chapter officer.
