Manufacturing process 5.1 Raw material production Flor de Sal is sea salt produced by natural evaporation in small traditional salt flats. It originates as a thin crystal layer on the surface of the brine, skimmed off by hand every day in good weather conditions, using special sieves and then sun dried 5.2 Process description The raw salt undergoes optical scanning, metal detection and manual selection. The salt is then packed into PP or PE bags (100g, 250g or 500g), which are heat-sealed and in turn packed into fitted cloth bags. 5.3 Type of process Batch production 5.4 Traceability A traceability system is in place based on a fully implemented HACCP System, and enables the identification of production lots and their relation to batches of raw materials as well as packaging in direct contact with food, ensuring traceability until delivery to the customer Página 4 de 6
