R&D UPDATES Purdue University: Outstanding Food Science Award Fiberstar s own Dr. Kurt Villwock received an Outstanding Food Science award at Purdue University on October 26, The faculty created the recognition to pay tribute to those who have established an outstanding and unique record in the field of food science. Criteria for this recognition are based upon evidence of excellence in industry, academic, government or other endeavors related to food science. At the ceremony, Kurt gave a presentation entitled Embracing the Complexity of Food Microstructure which traced back how his recent work at Fiberstar on Citri-Fi functionality in food applications was the culmination of work that started during his formative years in graduate school at Purdue. The talk was given to a number of food company industry sponsors. If you have additional questions about the studies, please contact Dr. Villwock at k.villwock@fiberstar.net. Frozen Lemonade Application Lemon oil was plated on Citri-Fi 100M40 and used to create frozen lemonades. This clean label high oil load plating technology is an ideal way to turn liquids into powders naturally. This technology provides benefits such as texture improvement and freeze/thaw stability in the final product.
