Martin Luther King, Jr Week: Trivia Contest Winners! 1 1 2010 Research Grants/Renewals 2 West Liberty Middle Students Visit College of Dentistry 3 4-5 Dr. Steven Levy, Department of Preventive and Community Dentistry, was recently interviewed by Washington Post staff writer Juliet Eilperin about the difficulty of measuring the impact of fluoride on children s teeth. Ms. Eilperin noted that the amount of bottled water Americans drink today is twice the amount they consumed ten years ago. No comprehensive study has yet been done to evaluate the impact of bottle water, which lacks fluoride, on dental caries. Dr. Levy, whose ongoing fluoride research has been studying the fluoride intake of participants since birth, noted, Those who had more bottled water had a slight tendency to have more decay in the baby teeth, but we had very small numbers. He added that it wasn t a definitive study. The Centers for Disease Control and Prevention (CDC) says studies show fluoride reduces dental caries in adolescents by 8-37 percent. In adults, dental caries are reduced by 20-40 percent. Today, approximately 5 percent of Americans have fluoridated drinking water. He gave two presentations: Surgical Implant Placement Immediate Loading vs. Staged Loading in the Esthetic Zone and Role of Soft Tissue Esthetics in Management of Implant Outcomes. The meeting was held January 28 at the Wiltshire Grand Hotel in Los Angeles. 2011 Local AADR Research Day: February 15 Students, faculty and staff are invited to the Local AADR Research Day activities on February 15, and to attend the evening reception and awards banquet. The keynote address will be given by Dr. Lawrence E. Brecht, DDS, New York University: Advances in Cleft Palate Care: The University of Iowa New York University Medical Center Connection. The three-year grant will support ongoing data collection of age 17 dental examinations of Iowa Fluoride Study subjects for dental caries, dental fluorosis, and other oral health conditions. Dr. Christopher Squier, OPRM and Dows Studies of the Barrier Role of Vaginal Mucosa in the Pathogenesis of Toxic Shock Syndrome. $110,550 (renewal). Funded by Procter & Gamble. Dr. Christopher Squier, principal investigator; Mary Mantz, research assistant. The research is studying the pathogenesis of toxic shock syndrome, which involves the penetration of the toxic shock toxin produced by organisms on the vaginal surface across the vaginal epithelial barrier. This study characterizes the nature of that barrier. Institutional Training Program in Oral Health Research. $55,35 (renewal). Funded by NIH. Dr. Christopher Squier, project director. This grant offers a comprehensive range of training programs to develop dental scholars whose research skills will enable them to apply the advances in biomedical science to improve the oral health of the nation. Dr. Clark Stanford, Associate Dean for Research Conservative Treatment of Patients with Temporomandibular Disorders a Pilot Study. $112,11 (renewal). Funded through Palmer Chiropractic University/ US Dept. of Health & Human Services/NIH. Page 3 West Liberty Middle School Students Visit the College of Dentistry (Above): Aaron Figueroa (D3) assists a West Liberty Middle School student in the Bench Lab. The College of Dentistry was pleased to provide a simulation experience for 11 West Liberty Middle School students who are participants in Project HOPE, a career education pipeline program for the health sciences. The students visited the dental college on Friday, January 14, 2011, and received information about dentistry as well as an instruction on waxing from Dr. Marcela Hernandez, Department of Operative Dentistry. They also spent time in the Bench Lab where they received a hands-on experience. Third-year dental students, Aaron Figueroa, Steve Leifker and Jane Vu assisted Dr. Hernandez with instruction and supervision before providing the students with a tour of the building. Page 4 2011 Celebration of Human Rights Dr. Martin Luther King, Jr. at The University of Iowa International Recipe Contest The Diversity Committee asked College of Dentistry faculty, students, and staff to submit recipes that are accessible to the home cook but still have the authentic taste of an international cuisine. See page 5 for a list of the contest winners. From Mary Yoder, Department of Operative Dentistry My mother's mother came to the United States through Ellis Island from Sweden when she was 18 years old. Christmas Eve smorgasbord was a tradition we celebrated every year without fail and Swedish meatballs are always served. Swedish Meatballs ½ cup finely ground dry white bread crumbs ½ cup milk 2/3 lb ground pork 2/3 lb lean ground beef 3 beaten eggs ½ cup finely chopped onion (may use crushed minced onion) 1/2 teaspoon ground allspice 1/4 teaspoon white pepper 1/2 teaspoon salt Boiled potatoes Add bread crumbs to milk. Mix all ingredients thoroughly. Make into small balls about the size of English walnuts. Brown in butter on medium heat, turning to brown on all sides. Place in casserole. Make enough gravy to coat the meatballs lightly. Mix pan drippings (add more butter if necessary), flour and milk (and a couple tablespoons of coffee). Pour over meatballs and serve with boiled potatoes drizzled with melted butter and fresh parsley. Alternative cooking method Place meatballs on lightly buttered baking sheet and bake at 325 for 45 minutes, turning to brown evenly.
