3 Page 3 Who Are the People Behind The DSB Room Names? Part 2 As you begin using rooms in the west addition of the dental college, you may notice name plates along with the room numbers. Have you wondered who these people are? They represent a long and illustrious history of people deeply connected to the UI College of Dentistry. In some cases, these donors gave directly to the Campaign to name a space. Rooms were also named in honor of or in memory of someone, or funds from an estate were dedicated to the building, and a room was named after the person. Dr. Lynn and Mrs. Judy Curry and Dr. Cathy Curry Tigges and Scott D. Tigges (Curry-Tigges Reception Area for Center for Clinical Excellence and Faculty Practice, W405) [no photo available] The Curry-Tigges family gift comes from a family deeply connected to the UI College of Dentistry. Dr. Lynn Curry received his dental degree in 1965 and Dr. Cathy Curry Tigges received her degree in Lynn and Cathy both practice in Carroll, Iowa. Dr. Lynn Curry s contribution to dental education includes working with the College of Dentistry to revitalize the school s preceptorship program, to successfully retain dental graduates in Iowa, and to encourage many students to pursue a dentistry degree. He is a member of the Steering Committee of the College of Dentistry s Building Transformation Project as well as a past president of the UI Dental Alumni Association. Dr. Curry has served on the Board of Dental Examiners since Kay D. Mescher (Mescher Problem-Based Learning Classroom, W203) Ms. Mescher graduated from the University of Iowa s dental hygiene program in 1959 and earned her master s degree in dental hygiene in After countless years of teaching the dental hygiene program, she began a new teaching and administrative role in the UI s Women in Science and Engineering program. Concurrently, Kay also taught communication skills to first and second-year dental students and simulatedpatient interaction skills to third and four-year students. After a long and productive career, she retired from The University of Iowa in Kay was known for her spirited approach to life, ability to listen and teach from life experiences, and her enthusiasm in helping her friends, students, and colleagues feel understood. She passed away in Dr. Samir E. Bishara (Bishara Problem-Based Learning Classroom, W201) Dr. Bishara was a professor of orthodontics at the University of Iowa College of Dentistry. He received his BDS degree and diploma in orthodontics from Alexandria University in Egypt. After practicing dentistry for 11 years in Egypt, he completed a fellowship in pediatric dentistry at the Guggenheim Clinic in New York and then obtained his DDS (1972) and MS (1970) in orthodontics from The University of Iowa. He joined the College of Dentistry faculty in 1968 and served continuously until his death in During his professional career of more than 45 years, Dr. Bishara earned an international reputation for his excellence in the specialty of orthodontics. As a committed teacher, Dr. Bishara taught generations of undergraduate and graduate students and supervised numerous MS and PhD theses, including several international studies.

4 Page 4 INTERNATIONAL RECIPE EXCHANGE RETURNS! As part of the UI 2012 Celebration of Human Rights and Diversity during the month of January, the College of Dentistry Diversity Committee will again sponsor an international recipe exchange. The Committee is asking Dentistry faculty, students, and staff to submit recipes that are accessible to the home cook but still have the authentic taste of the cuisine. Please include a brief statement describing why the recipe is typical of that heritage or culture and what it means to you. You will find this week s recipes on page 5-6. Please send your recipe(s) electronically to Mary Lynn Eckert at mary-lynneckert@uiowa.edu. All recipes submitted will be featured in the DSB Weekly. 5 Page 5 (International Recipe Exchange, continued from page 4) F R O M M A R I E P H I L L I P S, D O W S I N S T I T U T E F O R D E N T A L R E- S E A R C H These recipes are often provided for potlatch which is the equivalent of potlucks here in the lower 48 (as Alaskan s call us). I am Cheyenne Indian from Wyoming, and my children are a mix of Cheyenne Indian and Tlingit Indian from Alaska. BAKED SEAWEED Believe it or not, this tastes like popcorn. It is very good and SO nutritious! We had this in Alaska when we wanted something crunchy and salty! Ingredients: 2 sheets of seaweed 1 tbs. toasted sesame oil 2 tsp. salt (preferably flake sea salt) Black sesame seeds (optional) How to make it: Preheat oven to 300 degrees On a cookie sheet lay out seaweed and brush each side with the sesame oil (brush lightly) Sprinkle both sides with salt (decrease or increase according to taste) Bake for five minutes After the seaweed is dry and slightly crisp from the baking sprinkle with sesame seeds if you are using. After the seaweed has cooled, pop into your mouth like popcorn! Salt (optional) Lime (optional) (International Recipe Exchange, continued on page 6)

6 (International Recipe Exchange, continued from page 5) Page 6 F I S H H E A D S O U P Marie Phillips: This is one variety on a fish head soup. In Klawock, Alaska, where I lived, they would leave the fish head in the soup with the vegetables and broth, and the eyeballs were a delicacy. Things You'll Need 2 cooking pots Colander or strainer Fish head Salvage fish parts Water ½ cup rice 4 potatoes 3 stalks of celery 3 carrots Parsley (optional) Salt (optional) Lime (optional) Rinse, scale and fillet the fish. Remove and discard any guts and undesirable waste parts from the inner portion of the fish. Most of the filleted meat could be used for other recipes. Add the fish head and other salvage parts to a pot with 4 cups of water and let cook for 20 minutes over a low heat. Strain the fish broth into another clean pot using a colander. Discard the fish parts, leaving a fish-free broth in the other pot. Add sliced potatoes, carrots, celery, tomatoes, parsley and salt to the broth and cook on low for 10 minutes. Add the rice to the mix and cook for 12 to 15 minutes on low heat set ting. Let the soup cool before serving with some slices of lime. O HOGAN S IRISH CREAM For 6 cups 1 cup Scotch Whiskey ½ cup White Rum 3 pasteurized eggs 1 can sweetened condensed milk 1 pint ½ & ½ 2 TBSPs chocolate syrup (Hershey s) 1 tsp. vanilla extract Place all ingredients in blender and blend for 45 seconds. This will keep refrigerated up to six weeks. Shake before serving. Enjoy straight up, on the rocks or in coffee.

7 Page 7 The Hallowed Ground Bike Trip: the Waltons and a Friend Bike Through Some Civil War Battleground Sites As we contemplate our recent snowfall, Professor Emeritus Rick Walton, his wife, Laura, and a friend can fondly recall their one -week, 350-mile bike ride last July. The Waltons and Dr. Bill Hammond, a retired anesthesiologist from the Medical College of Georgia (formerly at UIHC), toured some Civil War sites. They flew to Harrisburg, PA, with their disassembled bikes. On day two, after bicycle reassembly, they rode to Gettysburg on back roads, which Rick described as very hilly, rural, with horse farms. (An additional challenge was that Rick lost their maps.) (Above: Little Round Top, site of a major Union Army The group s accommodation for two victory at Gettysburg) nights was the Fairfield Inn 1757, one of only five US inns that has been in continuous use since the 1700s. Their Gettysburg Battleground visit was enhanced by a 2½ hour Segway tour. On day three, the Waltons and Bill Hammond biked to Sharpsburg, MD, by crossing the Blue Ridge Mountains over fairly heavily traveled, and sometimes very steep, two-lane roads. Their accommodation that night was the Antietam Inn Bed and Breakfast. On day four, Rick, Laura and Bill biked to the Antietam Battleground where 23,000 men died in the one-day battle. Harper s Ferry was the site of John Brown s failed attempt to capture the Federal Arsenal with the hope of inciting a national slave revolt. (On an interesting side note, John Brown traveled through Iowa and spent time with Quaker friends in eastern Iowa while gathering recruits.) (Hallowed Ground Bike Ride, continued on page 8)

8 Page 8 (Hallowed Ground Bike Ride, continued from page 7) The following day, the trio biked the Chesapeake & Ohio canal towpath along the Potomac River. (The towpath runs from Washington, D.C., to Pittsburgh, PA.) Their next stop destination was Hanover, PA. On the final day of their bike tour, they made their way back to Harrisburg. During that last morning, before flying home, they visited a new and fascinating Civil War museum. For Rick, highlights of the bike trip included having an intimate, first-hand view of the battlefield locations as well as the topography, woods, and ridges of the sites. His Gettysburg highlights were South Ridge and Little Round Top, a major victory for Federal troops. At Antietam, a highlight was visiting the Dunker Church. They also enjoyed their bed and breakfast stays and biking the famed Cumberland & Ohio towpath. One additional bit of consternation was that their flight home was delayed one day because of mechanical problems. Nonetheless, it was a good bike trip. 9 Page 9 Tai Chi in the DSB! Dental Human Resources, in consultation with UI Wellness, is making available to College of Dentistry faculty/staff/students an eightweek session in Tai Chi. Tai Chi fosters health of mind, body and spirit through training in relaxation, breathing, posture, and slow integrated movement. Over time, practicing Tai Chi reduces stress and improves balance, strength, cardiovascular health, and alignment. Because Tai Chi exercises are done in a standing position, there is no need for a mat, a block, or need to get down on the floor. Lori Enloe, our instructor for this series, is a physical therapist and certified Tai Chi Fundamentals instructor who has studied Tai Chi since She has taught in Iowa City since 2005 using a program which is based in traditional Yang Style Tai Chi. This curriculum systematically teaches the basic movements of Tai Chi in a natural, efficient manner. There is an added plus: Lori says that Tai Chi also helps her keep balanced as a parent of two active boys! For those who are not familiar with Tai Chi and are thinking about enrolling or simply want to know more, Lori will offer a complimentary introductory session on Wednesday, January 25.
